Chocolate Weetbix Slice

  • 1 cup crushed weetbix (or cornflakes)
  • 1 cup self raising flour
  • 1 cup brown sugar
  • 1 cup desiccated coconut
  • 2 tablespoons cocoa
  • 150g melted butter
  1. Preheat the oven to 180’C
  2. Put the weetbix, self raising flour, brown sugar and coconut in a mixing bowl
  3. Add the melted butter and stir until combined
  4. Press the mix into a greased rectangular lamington tray
  5. Bake for approximately 15 minutes
  6. Leave to cool

    ICING
    2 tablespoons cocoa
    1 tablespoon butter
    1 1/2 cups icing sugar
    – Mix the above icing ingredients with a small amount of boiling water
    – When the slice is cool, ice it and cut it into squares
