Fish-cakes

  • 420g tin of red salmon
  • 1 small onion chopped and browned
  • 1 cup breadcrumbs & extra
  • 1/2 cup finely chopped parsley
  • 2 eggs
  • 2 tablespoons lemon juice
  • Black pepper
  • Oil
  • Butter

1. Open salmon tin and pour off half the liquid
2. Mix together the salmon, cooked onion, breadcrumbs and parsley
3. Mix in beaten eggs and lemon juice
4. Season with ground pepper
5. Shape into patties
6. Roll patties in extra breadcrumbs
7.  Fry in a small amount of oil and butter
8. Drain on paper
9. Serve with mayonnaise and salad
